Yummy Vitamin C Smoothie for Toddlers

Hello fellow parents!

Welcome to my parenting blog! I decided to start this blog because I want you all to have a place to go for realistic parenting goals. My apartment is a mess, I have no idea what I'm doing, but I feel that I am doing a pretty decent parenting job. I am a full time student getting a PhD in Biomedical Science (I am a Cancer Biologist), and I have a 17 month old daughter. Most days I'm too tired to move, but I somehow make it work. Don't expect any Instagram worthy photos on this blog, who has time for that????

My daughter is currently in daycare/preschool, and she is constantly getting sick. After the tenth cold in a row, I decided to be proactive and start making her daily smoothies. I have a few recipes that I rotate on a weekly basis, and I pick the smoothie of the day based on the ingredients available and what nutrients she may be needing. My recipes don't have exact measurements, I just throw everything together and blend. Today I'm going to share an immune boosting smoothie recipe that my daughter loves. It is packed with Vitamin C and other immune friendly ingredients. I like to make her these when she starts sniffling, and it helps so much!

Ingredients will be listed below.

I start with milk and some lemon juice (a big splash).

I add a few handfuls of baby spinach and a few slices of pineapple (these came from a can).

I started adding honey to my smoothies, but you can skip this step. I only a a little!

After blending the above ingredients, I add a lot of old fashioned oats.

I add a lot of grated ginger, and I blend everything again.

I then add a lot of frozen mango chunks and blend.

I then fill up refillable pouches that I purchased on Amazon.

How cute are these??????

I make enough to fill two glasses (parents need nutrition too!) and two pouches for my daughter.

I give my daughter one pouch for breakfast, and I pack one for lunch.

Ingredients:
  • Milk- around 2-4 cups
  • Lemon Juice- a big splash
  • Baby Spinach- a few handfuls
  • Pineapple Slices- 2-4 slices (if you use canned, add some of the juice to the smoothie)
  • Honey- just a little (optional) - FOR 1 YEAR OLDS AND OLDER
  • Old Fashioned Rolled Oats- a nice thick layer
  • Ginger- add a lot of grated ginger
  • Mango- as much as you want! I add a lot to my smoothies, mango makes it taste amazing!
That's all there is too it! Don't worry too much about exact measurements, it's really hard to mess up a smoothie with set ingredients. Just have fun with it!

I hope you enjoyed this post. I have so many more smoothie recipes to share, so stay tuned!

XO
